JOB DESCRIPTION

Ritzy Wine + Tapas require a Head Chef . We are opened 6 nights a week no split shifts. You will be responsible for managing kitchen staff , daily food preparation, production and planning and implementation of menus, which are designed to deliver innovation and creative food which meet market/customer demand and you will be able to meet budget guidelines. You will work with the owner in liaising with suppliers and controlling budgets.

Key Responsibilities:

Demonstrate ‘ownership’ of the restaurant through commitment to the following areas of responsibility. Duties and responsibilities include but not limited to:

  • Through the Kitchen Brigades hands on supervision of the food service operations on a day to day basis.
  • Ensure food standards, preparation, presentation and cooking techniques meet restaurant and industry standards and maintained at that level. Work with the kitchen staff and take corrective action where appropriate if standards are not met.
  • Strive continually for innovative, quality, value for money food, which is presented and served in the most complimentary way. Cultivate a positive work environment where learning and personal development are benchmarks by which quality improvement is driven.
  • Work closely with the front of house team to meet food and beverage operational objectives.
  • Co-ordination of the stewarding team to meet the kitchen’s requirements.
  • Ensure that all kitchen staff are fully briefed prior to commencing their shift. Delegate duties to the Kitchen staff so all aspects of the shift are covered promoting a team working environment.

To be successful in this role you must have :

  • · Have a Minimum Certificate IV in commercial cookery or Diploma in Hospitality is required
  • · Have experience in a busy and fast paced restaurant.
  • · Have the passion, attention to detail & ability to plate up creative and high quality and food.
  • · Have a minimum experience 2 years experience in working Tapas Bar or similar cuisine type and minimum one year working as a head chef.
  • · Have previous experience in menu planning ,managing food cost, ordering and leading a team.
  • · Be proficient in all aspects of food safety, including HACCP
  • Prepare food and meet special dietary requirements
